Pelan Hospitality is a boutique consultancy founded in 2025 by Madone and Cory Pelan, husband-and-wife global advisors with decades of combined experience in luxury hospitality and culinary leadership.
The firm provides strategic advisory, management and support for hotels, restaurants, and industry organizations, specializing in business strategy, organizational leadership, revenue growth, luxury service design, food & beverage expertise, and destination development.

Madone is an industry thought-leader and passionate advocate, giving back through mentorship, industry speaking, and board leadership. Having served as President, Meeting Professionals International (BC Chapter), Vice Chair of the BC Hotel Association, Director with Destination Greater Victoria, and Chair of Oak Bay Tourism.

Cory Pelan, Co-Founder
Chef | Co-Founder, Pelan Hospitality | Entrepreneur | Advocate for Sustainable Food
A seasoned food artisan, culinary entrepreneur and Red Seal Chef with over 28 years in the culinary industry, Cory has worked in some of Victoria and the Lower Mainland’s most celebrated kitchens. His passion for traditional curing methods and bold flavor combinations led to the creation of The Whole Beast Salumeria, and more recently, co-ownership of The Village Butcher, together offering a true nose-to-tail connection for both fresh and cured meats.
Cory’s philosophy is deeply rooted in “nose to tail” cooking, traditional curing and fermentation, and flavour innovation-always paired with transparency, respect for animals, and a commitment to his community’s food heritage. He continues to mentor, innovate, and serve as a connector among chefs, producers, and consumers in Victoria’s culinary ecosystem.
As Co-Founder of Pelan Hospitality, Cory collaborates with his wife, Madone, to bring award-winning expertise to luxury hotels, restaurants, and industry organizations, blending his culinary background with strategic advisory and destination development. Cory brings extensive knowledge in menu design, costing, kitchen design and systems, inventory and workplace culture as well as deep rooted connections with farmers and suppliers of top quality ingredients.
Beyond the kitchen, Cory is a committed advocate for sustainable food and food security initiatives across Vancouver Island and beyond. He currently serves as Board member and Co-Chair of Scholarships & Mentorships with the Chef’s Table Society of BC, and has proudly contributed as Past President, Treasurer, and Board Member of the Island Chefs Collaborative, as well as serving on the boards of Slow Food Vancouver Island and Farm Folk City Folk.
Cory believes in championing community, mentorship, and sustainability, values that drive both his work and advocacy.
